Strawberry Jam and Sourdough Bread

What to do with the excess strawberries from a successful picking day? The ones that are in the freezer, just waiting to be made into something delicious…how about Jam? But that’s really hard to do…and so time consuming…and not worth the trouble. Really? Because I whipped up this 3 ingredient jar of yummy in the space of a few hours…and mostly involved a slow cooker doing its thing. Come on, give it a try…you won’t be sorry.

The Usual Cast Of Characters

4 pints strawberries

2-3 cups white sugar

1 (1.75 ounce) package powdered fruit pectin

Optional 2 Tablespoons lemon juice

The Steps To Glory

  1. Crush strawberries completely with a potato masher; pour into the crock of a slow cooker.
  2. Pour lemon juice over strawberries.
  3. Sprinkle pectin over strawberries.
  4. Let mixture stand 10 minutes.
  5. Stir sugar through the strawberries.
  6. Cook on Low for 2 hours, stirring twice while it cooks.
  7. Increase heat to High and continue cooking until jam thickens, about 2-3 hours.
  8. Blend to desired consistency with an immersion blender

    1. I froze batches in plastic containers and transfer to the glass jars as we need it. In the past I also added about 3 tablespoons of Chia seeds to thicken it a bit more in slow cooker but my picky Princess will not eat it. It is super easy and tastes so fresh.

    1. I like to add a few table spoons of Chia seeds in to thicken it. Unfortunately my picky Princess would not eat the jelly with โ€œblack Dotsโ€. You could lessen or increase the pectin.
